Rocky Road Trifle

All the flavours of a rocky road in a trifle. A simple and quick dessert for Christmas.

Ingredients

  • 1 cup Community Co Mud Cake, sliced into 2cm slices
  • 2x85 g strawberry or raspberry flavoured jelly
  • 300 ml Black & Gold Thickened Cream
  • 1 punnet fresh strawberries, hulled and cut in half
  • 450 g double thick custard
  • 200 g marshmallows
  • 1/4 cup roasted peanuts, roughly chopped
  • 1 punnet fresh raspberries
  • 50 g dark chocolate, shaved or chopped
  • 100 g mini marshmallows

Instructions

  1. Prepare the jelly as per packet instructions and refrigerate until ready to use.
  2. Whisk the cream until soft peaks form.
  3. To assemble, place the mud cake on the base of the trifle bowl then layer with jelly, strawberries, custard and marshmallows, finishing with a layer of whipped cream.
  4. Top with peanuts, raspberries, shaved chocolate and mini marshmallows.
