Ingredients
2 kg pork leg, bone in
1 tablespoon olive oil
1/2 cup finely chopped walnuts
1 tablespoon snipped fresh rosemary
Instructions
Preheat your oven to 180C.
Remove the rind of your pork and gently place it on a rack in a shallow baking pan.
Combine walnuts and rosemary; press them over top and sides of your roast.
Finish with a generous sprinkle of sea salt and cracked pepper.
